Goat meat is a Nigerian favourite. It is soft and tender and, some say, tastier than other red meats. To get the best out of goat meat, cook it in a way that removes the fatty content. That said, it generally has less fat than chicken. Most importantly, goat is the number meat of choice when making peppersoup.
